CAREFREE CRANBERRY ROAST
4 lb SIRLOIN TIP or EYE OF ROUND ROAST
1 (14 oz) jellied cranberry sauce
2 green onions, finely chopped
¼ cup soy sauce
1 tsp ground ginger
Place roast fat side up in open pan. Heat remaining ingredients, stirring
until smooth. Spread sauce mixture on roast, reserving extra. Cook roast,
uncovered, in 275°F oven approximately 40 min/lb for rare, 50 min/
for medium-done. Slice thinly across the grain and serve with reserved
sauce, heated.
Makes 10-12 servings.
Pepper Roast Variation:
Combine 2 tsp crushed peppercorns, ½ EACH ground cloves and
dried oregano, 2 Dijon mustard and 1 lemon juice. Spread on roast in
place of cranberry mixture. Cook as directed above.
