Yummy Summer Tomato Quiche

One 9 inch pie crust- Cover with a double layer of foil and bake at 425 degrees for 8 minutes, remove foil and bake an additional 4-5 minutes until dry.

1 TBS Butter with cup chopped onion
Sauté until tender and then let cool.

4 slices of Bacon fried, cooled and crumbled
1 Cup Shredded Smoky Cheddar Cheese or Swiss.
I like Swiss.

Mix together:
3 Eggs
Cup of half & half or milk
3 TBS flour
1 TBS Basil
tsp salt-optional
tsp Dry Mustard
1/8 tsp pepper.

Once you have baked the shell layer with the shredded Smoky Cheddar or Swiss cheese. Then lay inched sliced TOMATOES over the top of the cheese. Next pour the egg mixture with onions and bacon over the top of the tomatoes, sprinkle with paprika and Bake at 375` for 35-40 minutes. Let stand for about 5 minutes once baked and it will easily cut.
