Postby Kathie in Thorp » Sun Nov 09, 2014 3:02 pm

My neighbor brought me some Chantrelle mushrooms the other day -- I think picked on their property. So, I need ideas: Chicken and Chantrelle something . . . .

Heavy cream, chicken broth, butter, red wine vinegar, mushrooms, season to taste and reduce for a nice thick sauce. Cook the chicken, and serve with egg noddles and the creme sauce

Thanks, guys. I'll be trying those, both of them. I'd found a really interesting recipe, but didn't think I had any blue cheese or gorgonzola in the house -- just found some in the freezer! So, I'm going to try this one: http://www.foodnetwork.com/recipes/pan-roasted-chanterelle-gorgonzola-stuffed-chicken-breast-recipe.html I'll let ya know how that turns out.
