So it sounds like you had already made up you mind before posting. Regardless, are you planning on only taking beef calf's or just whatever you can find? Knowing where you are it may be more prevalent to find beef calf's anyway. It could take some headaches away (like scours) but add more headaches with less docile animals. You could end up having to bottle feed more than you originally planned.

This just to keep your mind open:

Rotate a handful of feeder pigs on your pasture or forest. (rotation enhances your land instead of destroys)
Run your milk through the pigs.
Sell the best pork in the world to anyone who will listen.


This may not work in your situation, and you've already committed to nurse cows, but still good for a mental exercise.
