Have you ever salt cured a deer hindquarter or should to see how it tastes?

Never cured a whole joint but do often break down the different muscles and dry cure them.

I got a shoulder that kinda took a beating I'd like to experiment with salting and smoking I don't want to ruin a good hind quarter. I wonder if I can salt it and treat it just like a ham

Yes. Just treat it like you would a pork ham. I've seen it done just never have done it.
