Wonderful! It was a cheap roast and it turned out very tender and tasty. I did a rump roast last week @ 136/29 and it made some of the best roast beef sandwiches I've ever eaten.


Cool business isn't it? I do think you get more for your effort when you use poorer cuts of meat. I did some prime ribeyes with it and though they turned out great but I really don't think it improved them that much. I guess what I'm saying is a great steak is a great steak but with sous vide you can take a poor steak and make it into a great steak. The most bang for the buck I've seen has been with venison and chicken. Sous vide totally transforms these.
