Those eggplant slices are like butter. Seriously like butter. You could spread them with a knife like you would softened butter. Best I've ever had. I normally grow ichiban which is a long slender type. This year they didn't have ichiban seed but had one called long slender eggplant, so I got it. It's got ichiban beat all over the place.

Thanks, I fry them in vegetable oil heated to about 350F. After slicing, lay them on a paper towel and sprinkle salt on them. This will draw out moisture. After about ten minutes or so dry them off with a paper towel and toss the slices with corn meal. Then fry until browned, 2 or 3 minutes each side. They soak up very little oil when done this way, so drizzling a little olive oil on the sandwich is a good addition.
