Deer season is coming up fast. I already have a good recipe for regular sausage , I would like to try to make a sweet italian sausage . If anyone would have a good recipe to share I'd appreciate it. If anyone is interested in my sausage recipe it is as follows ; 40 lbs. meat , 1/2 - 3/4 lbs salt ( according to your taste ), 2 tablespoons black pepper , 1/2 lb ground coriander , 1/2 lb light brown sugar . This can be used as fresh sausage or smoked .
