Wheat for hay

If I drill some wheat into my hayfields, can I graze them for a couple of weeks or until the wheat starts to come up, or should I just leave the cows off them until later??

2nd question: If I should graze these fields later on after the wheat is well established, will this hurt the amount of hay the wheat will produce sometimes during May??

What I'm trying to do is have some winter grazing plus a good crop of wheat for round rolls of hay to start off with next yr.

All advice appreciated, as to how much seed to plant/fertilize,etc.
 
The dairy next door does it and the only problem is that when we cut the hay the wheat doesn;t dry as quickly as the the grass so we have to ted it a couple of times which ends up hurting the grass portion.
