    What are you eating today?

Fenceman I have tomato envy! It will be awhile before they get ripe up here. That's a good looking dinner and you should be proud.

    Sausage Gravy

I would bet the canned gravy is gross. The "just add water" packets of white gravy actually don't taste bad but look at the label. Sodium, hydrogenated oils and preservatives. Good old sausage grease is better for ya and tastes better too. I usually don't have enough grease off the sausage...

    Charcoal Question

Jo I don't think you are gonna get a patent for the Steak-n-ater. In fact I hope you don't get slapped with a cease and desist from whoever already holds the patent on the "park grill". http://www.ebay.com/itm/like/141580157805 Congrats, you have re-invented the wheel! That...

What's your plans for meals/finger food for Superbowl?

You have to get yourself ready and get to the Drs without any coffee Monday am? That's just downright mean! Hoping the tests aren't too unpleasant and you get optimal results! We are actually doing one last Christmas get-together with my mom and cousins on Sunday, bad weather and travel and...

    What are you eating today?

We have been eating turkey, turkey and more turkey. Roasted a "free with purchase of ham" turkey Friday and we have been eating it ever since. First nite, roast turkey, gravy, mashed potatoes and a vegetable blend. Sat. nite, hot turkey sandwiches and applesauce. Then there was the...

    Please share your chili recipes

That first recipe doesn't have enough "chili" in it to suit me. It doesn't have to be so hot it blows up your insides, but it has to have chili flavor. The best peppers for that I have found so far, guajillo chiles. They aren't hot but have a ton of chili flavor. I bought a big bag of them...

Black eyed peas cooking here, too. Put in some sausage, onion, beer, V8 to ramp up the flavor. Will make cornbread in the cast iron skillet to go with.

    Something for Sky

I had that Velveeta fudge one time from a co-worker. I didn't think I would like it, but it was very good. Hate to think how fattening it is. If you like a softer fudge, I bring you.... World's Easiest Fudge 1 12 oz package chocolate chips - your choice of semi sweet or milk 1 can...

    Hard boiled eggs

We have chickens and the eggs are always fresh, I always tore them up trying to peel them. I read somewhere to steam them instead of boiling, and lo and behold it works. Steam them for about 15 minutes, shock them in cold water, peel right away. Probably similar to the oven method, I might...

    chili recipes

Wow, that is some fancy chili! Mine goes something like: 2 lbs of ground beef, deer, bison, your choice of red meat. Start browning/crumbling it and about halfway thru add: 1 large onion, chopped 1 clove garlic, crushed/chopped When the meat is done add: chili powder - start with a...

    Smoking Chicken Pieces

Another vote here for brining. Basic brine is 1 cup salt to 1 gallon water. For a whole cut up chicken, or family size batch of chicken pieces, I only make up 1/2 gallon of brine. 1/2 cup salt, 1/4 cup sugar, smashed garlic cloves, bay leaves, lemon juice and the halves of the lemon. Pieces...

Pepper, which is hotter, adds more spice?

I like chili flavor without too much heat. Habanero is waaaay too hot for me! I like the smokiness of Chipotle, guajillo chiles have a great aroma and flavor, so do ancho chiles. I am trying to come up with the perfect blend to make my own chili powder/seasoning but I'm not there yet either.

    Bread Fail

Lucy tried that and it didn't work out so well! http://blogs.ocweekly.com/stickaforkini ... ucy_fo.php Sounds like if your water was almost boiling, you killed the yeast. Think, baby's bottle warm, not too hot if you test it on your wrist.

    Charolais Sauce

White sauce deluxe, that's for sure. I bet it would go good with asparagus, I just love asparagus in a white sauce over toast.

    Breaded Tomatoes

Isn't there an Italian version that is served cold? Tomatoes, crusty bread to soak up the juice, garlic, olive oil and all that good stuff? Isn't that gazpacho? HD, thanks, I had found that recipe too and pretty much used it, except I used tomatoes that I had frozen. It came out too runny...
